I really use to like the Natural High's Spicy Thai Chicken(still do) and a few other freeze dried pre-packaged meals..... then i discovered this site http://www.freezerbagcooking.com/ not only can you spawn your stuff in a freezer bag you can prepare a really good meal too!
So whats every buddy eles like to eat in the back country?

I think "Mountain House" is a good brand of freeze-dried stuff, although if I'm just going on a one night backpack (which is what I usually do) I bring along real food, including meat and stuff. The best backpacking trail snack is Gallo brand salami and sharp cheddar cheese inside a hoagie roll.
The best overall camping food for me though, hands down, is "hobo stew." Hamburger, potatoes, carrots, salt, and pepper, wrap it in foil and throw it in some hot coals for a while. Absolutely delicious...especially when it's dark and you're out in the middle of nowhere by a nice hot fire and a lake with clear skies and thousands of stars all around you.

If you're just out for a day or two, you can totally do omlettes easy. You make them before you go. Whip up your eggs and put em in a zip lock bag. Add your cheese, ham, veggies, whatever in the bag. Suck all the air out and pack it with you. When you feel the urge for an omlette, get some water boiling, and put the bag in for a few minutes until it's cooked. Try not to melt the bag. Cut the bag open and pig out!!
