picking shrooms

hey my entire jar is covered with small shrooms it seems quite hard to pick them by hand, without ruining the neighbour shrooms and the substrate should i cut them off with a knife? or should i pick them by hand? pics coming soon

They are still in the jars?? Your fruiting invitro???
On cakes if I have shrooms at different stages of growth I will just let some of the more mature ones go for awhile until some of the smaller ones catch up. If they are all at the same stage I would just pick them when they become mature. Then dunk and roll.
BTW, whenever your asking a question, it helps up out a lot if you give us as much info as possible i.e. invitro fruiting, type of substrate, if your using cakes have you double end cased or rolled them. It will allow us to awnser your question more fully.

Wow... way to like... know anything.  Look through the forums for a better place to put this. Then, read the guidelines of that forum to know what to do with this a little better. it is the cubensis ban hua thai cake from magicmushrooms.org there are about 5 shrooms which are bigger than the rest the whole cake is covered with small shrooms, so i would probably damage the surrounding shrooms, while picking them thats why i thought about cutting them with a knife, because you can work more carefully

Well cutting them with a knife will leave the bottom part of the stems on the cake to rot, and they will start to rot pretty quickly. Are they just small shrooms that are mature with open caps and releasing spores?? Or are they just small mushrooms that aren't mature?? If they are not mature let them go until they are about to open up, or if you want prints let them open up and start dropping spores.

Cut the ones that are ready with a knife so you don't damage the rest. When the others are ready to pick, remove the stumps from the first ones at that time. RR

a lot of small shrooms are hidden behind thick patches of mycelium, that look like cotton wool should i tear out the whole patch of myc. or just the shroom alone?

ive twisted all of them out now however, there are a lot of bluecoloured rests from the stems on top of the substrate, which are too much to get rid of all of them is that a problem?

They can start to rot if left unattended for a period of time. As RR said, cut the ones that are bigger as close to the base as possible until the smaller ones are ready.. then pinch + twist those off as well as any remaining stem stumps.
If some of those smaller shrooms on the cotton wool spots look like they are on a spot where some more pins may be forming (cotton wool forming into little bumps and dots) then just cut as close to the base as possible to avoid interfering, otherwise, just pinch + twist it off. 
As stated, dont forget to dunk + roll

if you have neighboring shrooms i usually cut them off with a pair or sterile scissors.
since you are growing invitro you could clip them but you would lose a lot of material possibly.
just use the twist and pull method.
