yes loosen and flip IME, it worked great for my PF cakes im doing. Yes it's normal for them to decrease in size a little.

wait til the whole CAKE is colonized, the dry verm barrier doesnt count
once FULLY colonized, wait 3 days then dunk, roll, fruit
or case them

I would recommend paying closer attention to the temperature that you are colonizing at because 40 days is a very, very long time for that amount of colonization to occur. What avg. temperature is your incubation chamber?

sounds fine.
even if it wasnt accurate, if your home is comfortable for you, mycelium will colonize. a few degrees here or there doesn't account for 40 days and still only being partially done... something else is wrong.
i saw a few days back now you loosened up your lids. has it helped? has it moved any?
any wierd smells? you might have a bacterial contamination that caused the stall.
it can happen, but ive never personally had a jar take 40 days that didn't have some other serious issue, like way too much moisture, or a contamination. seeing as you're original post was 9 days ago now, we're at 49 days. not looking so good. a really well prepared jar can finish in about 10. its usually 2-3 weeks for most. 4-5 weeks maybe if things aren't optimal. doesnt sound like these are even in the ballpark though.

are they all the way up to the verm layer or is that still some BRF left on top? If it's all the way up as it looks to be then i would say Me personally i would birth them..

They should not pin inside the jars and won't if they are kept in darkness. This is exactly what you want. You do not want to have the cakes start pinning until they are 100% colonized inside and out. Once the colonization period is complete you will place the cakes in your FC and they will start to pin in a few days.

at this point, if it was bacteria, the smell would be at least obvious enough that you'd notice something "off" if you sniffed the hole.. so no need to open it.
and it does look like its making progress. maybe they were stalled out a while when you had the tape on and now that they're breathing they're coming back around.
everything else you describes is normal. and since you didn't prepare the jars, it could be they used a really thick verm layer on top, and thats why its not colonizing upwards anymore... usually when you see just a few thin threads reaching through, that's whats going on, its going through the verm looking for more food.
ill pull a 360 on my previous post and say they're actually looking good. maybe another day or two to be sure the insides are done now that the outsides finished up, and you can probably birth those babies. (no, you don't need to wait for pins btw.)

haha...
you cant... thats why you give it an extra day or two or three and cross your fingers. 
as long as the outsides are covered, you're generally safe from contams. if the insides need finishing up, they'll do so after you've birthed them.
