bacteria in g2g jars
    #5870184 - 07/17/06 06:03 PM (17 years, 6 months ago)

I recently transferred 2 colonized quart jars to 20 jars of millet. Some showed slow growth and some none. When opened they all smelled like bad apple juice. I assume it was bacteria. I use quart jars with a 1/2 inch hole drilled in the lid and a disc of tyvek under the lid. I noticed that most of the filters were wet and smelled, they had a translucently wet appearance at the rim. I am wondering if the contam occurred during the g2g or came through the lid. Is it a known problem for contams to enter through tyvek? Also, after I pc there is always some small amount of water between lid and tyvek. I see it bubble out when I shake the hot jars after they are PCed. I don't know if this evaporates or how long it takes. Any help will be appreciated as I need to fix this problem so I don't keep cultivating bacteria.

I suggest putting the filter on the outside of the jar so it can dry off quickly after the PC session. Also, try using three or four 1/16" holes instead of one large one. By using smaller holes, the grains won't come into contact with your filter when you shake. A filter that is wet with grain juice is an invitation for bacterial contamination. I learned this the hard way from using plastic lids where the filters were inside the jar. I had a bacterial contamination rate of nearly ten percent. After switching to the method described above, the problem went away.

Thank you roger. I like your suggestion. What lid configuration exactly do you use? What kind of lid configurations are popular? I have never found much information about lid teks but always wanted to. Will 3 or 4 holes @ 1/16" provide enough air exchange?

Best not to keep foil on if you're using filters. The foil could keep the filter material damp.

My method is metal lid goes on first, metal side down instead of rubber side down so it's easier to get off later, then the filter disk, then the ring.

Three 1/16" holes are plenty. You don't need air exchange with grain jars, you only require gas exchange.
