CC, that advice is for cooking food (not in jars) in your PC.  Not for canning or using jars.  It's dangerous and stupid even for cooking foods.

Besides being dangerous it WILL ruin your pressure cooker eventually.  And when it goes it has a good chance of taking you with it.  It will also cause the water in your substrate to boil, which will totally screw your moisture content.

I totally agree 100%, just sayin... capless' mom (aside from being a total babe) wasn't pulling it out of her ass, people do do it.

The reason it is advisable to allow a PC to cool to normal pressure is so the liquid content inside whatever it is you are PC'ing doesn't boil.

If that happens, the jar or bag will EMIT STEAM.

That steam can saturate a gas exchange filter with nutrient laden moisture.

Which can lead to a contaminate touching the filter & wicking into the container. :mad2:

PC content boiling and venting steam, can also throw your moisture level far out of the optimal range. Which leads to clumps, dry jars, slow colonization and stalls. :mad2:
