how sanitary do you have to be with Coir?

How clean do you have to be when working with coir? I used my bare unwashed hands to fish the coir out of the soaking water. my hands had touched my desk and the carpet etc. Since pasteurizing doesn't kill everything i am worried that the coir will contam when it is spawned. I will be mixing the coir w/hpoo.

There is no way to tell.
You'll have to give up now, or keep going and wait.
Have you mixed your substrate yet? If not why not just re-pasteurize it?
It's always best to use the most sterile methods, so you don't have pre-scares like this.

I havent pasturized the coir at all yet. I will be mixing it w/hpoo that came pre pasturized.

So just re-pasteurize it.
I can't see why that would be harmful, someone else might want to second that.
But I believe you'd be just fine doing it once more, with some washed hands 
Oust, soap, bleach, vinegar and alcohol are your best friends.

It hasnt been pasturized yet. So you think that the pasturization would take care of anything introduced by my dirty hands?

Well, there are chances your hands added some crazy ass contamination to the coir, but I'd imagine your pasteurizing will take care of it.
If you can, get a PC, they MUCH better, after my first grow I went straight out and found a barely used 16qt mirro for like 20$ with all the bells and whistles.

its fine. coir is pretty contam resistant anyways. Ive had hydrated coir sitting out for months without contamination. Its used in horticulture, molds don't grow on it easily.

Don't re-pasteurize the poo, that will leech it. Just pasteurize the coir and be fairly clean per usual. Mixing it with the poo will provide firefang anti-bacterial action.

Only the coir.
