I have been thinking about alternative ways to use the spend substrates of shiitake and oyster. Since slugs and snails seem to love mush, the spend substrate could serve as a valuable food source for cultivating gourmet snails.
Helix aspersa (or Petit Gris)

The cultivation of snails (called Heliciculture) is mostly practiced in France, Italy and Spain were baked snails is a popular dish. I like them a lot and I am planning to grow some for home consumption and get more food from spent substrate.
Does any of you know if snails/slugs also happily munch on colonized substrate?

I don't think that will work on spend substrates because I don't see slugs on my spend substrata only on fresh substrates and mushrooms. This is really interesting. Maybe by treating the spend substrates in some way could attract the slugs. I'm willing to try something. I would need more informations on snails cultivation, their sickness, pests etc. I'll make research when I'll have time and share with you.

Hi micololo,
I was thinking that it might work for spent straw-based substrates, since it is also reported to be used for cattle fodder. Did you also observe slugs avoiding spend straw-based substrates?

When i tried my hand and snail herding they grew in the green house along with the oyster grows. They never really ate or bothered the mushrooms. I had plenty of feed out for them.
Myco they can get internal parasites.
Depending on what state in the US you may have regulations. Since the snail species used for food is also considered a pest.
You can make pens for them lined with copper they will live well in the pen as long as its cool moist and has plenty of hiding spots. You used to be able to pick up live snails at the fish market in the city by the hundreds. Mainly 400 to a box.

Very good idea dear Owl but i'm against the use of them in the food. Try to think just a second how they are cooked: in a few words when they're in life yet.
i don't want to stop your project, it's very interesting but it should be more usefull to grow them to eat parassites.

not sure if people eat them or not, but i always wanted a giant African snail 
i hear they carry meningitis though.

I know that snails and slugs do eat shiitake and morel spawn on grain...
