That is true. If a beginner is using the PF-Tek For Simple Minds | Fungifun, the Tek instructs that:
Once colonized store the jars at normal room temperature, about 21°C (70°F) to initiate pinning. Don't expose the jars to direct sunlight. Indirect sunlight (= the natural light that lights up a room because at day time out) or a low wattage lamp (cool white fluorescent lamp is ideal, incandescent lamp is less suitable) for 4-12 hours a day is sufficient.
Within 5-10 days (with certain mushroom strains it can however take up to 30 days) pinhead-size accumulations of mycelium should form. These so called pins represent the beginning of mushroom growth. In this case put the colonized jar wrapped in a plastic bag in the fridge over night and then proceed to fruiting next day, even if the cake doesn't show pins yet. This cold shocking usually helps trigger pinning somewhat.

I'm confused about this too. haha. I'm doing my first grow and my cakes are fully colonized and I've been waiting for pins to develop in the jars? So . . . Should I go ahead and birth?

yes. birth.
next time do not wait for pins, birth a day or two after the outside/bottom colonizes 100%.
the point is waiting for pins in the jar is bad.

Wow, how lucky can I get, I've only been waiting 2 days. (P.S. That pic above is not mine.) I copied it from the Fungifun Tek which I will never use again.

Yep. Definately birth. The reduction in CO2 when they are birthed is the most critical pinning trigger. Fungifun needs a good hard kick in the balls.
