pretty good vegetarian pasta dish, i just had it, should have taken some pics but its pretty much gone now

26 jumbo pasta shells
30 oz ricotta cheese
2 cups 6 cheese italian blend shredded
16 oz frozen chopped spinach, thawed and drained ( i use paper towels to soak up the juice)
2 large eggs beaten
0.5 oz ranch dressing mix (the powder)
4 cups marinara sauce
1/4 c fresh chopped basil

cook the shells and drain

mix spinach, ricotta cheese, 1 cup shredded cheese, eggs, pepper, and ranch mix in a large bowl.

pour 2 cups marinara sauce in a greased 13x9" baking dish, stuff shells with mixture, pour the remaining sauce and cover bake at 350F for 40 mins. uncover, put the remaining shredded cheese bake another 10 mins, remove and top with chopped basil

i found the recipe somewhere (newspaper maybe) not sure but ive made it several times and it is delicious. you can change it up using different cheeses or herbs. fresh herbs are key too. manicotti would also work instead of the shells but shells are easiest. i have a good recipe for a similiar dish with italian sausage and a bit cheesier ill post later.
