My compost pile on day 33 (PICS) please help Roger Rabit and others compost experts!

This is my compost pile (day 33) after turning it and to wet it. Still no good smell... (If you wish you can see it here on day 15: http://www.shroomery.org/forums/showflat...ue#Post5768853)



I used for the pile:
40 parts Horse manure 70 parts wheat Straw 10 parts fruit produce refuce (Tomatos, avocado pears, lettuces, apples, potato peelings, bannanas...) 1 part chicken manure 150 liters of hot air popped corn about 20 kilos of coffe grounds 1 kilo of gypsum per 60 kilo of dry pile 1 liter of vegetable oil per 50 kilo of dry pile and a lot of water!
These are the mistakes I think I did:
-I didnt pre-wet the straw -I didnt use a solid surface ( the floor is several layers of very thin wire mesh) -I used to turn the pile every three days, now I found it works better fliping the pile every 48 hours and turning it every for days. -I didnt shred well the advocado pears so it is still not complety decomposed... -here is very windy now so I started usin a plastic sheet to cover the pile (it breath through out the sides), because of this the pile got to dry in the first weeks...

So I ask: Should I use more gypsum? which are the problems if I add to much gypsum? Should I added it to the pile or to the water Im going to use to hydrate the compost before pàsteurizing it? should I add some more coffe grounds or worm castings to this water as well (thinking of loosing nutrients through out the composting process)? should the firefang be still visible in the compost after pasteurizing it?
I found one week ago mushrooms growing inside the pile (they looked like cubies but with a clearer cap and didnt got blue),I took them out and now that the pile is reaching again high temps I havent got this problem again...
Any ideas would be apreciated!

You can wait and add gypsum later or add it next time you stir the pile, but use close to ten percent. More chicken manure would also help. You can use it at up to three percent and the pile will really heat up.
It's probably getting close to being done. You don't need or want to let it compost all the way so it looks like soil. Just keep it wet and turn every couple of days. In a week or so, spread it out to cool and use.
Don't forget to check the ph and add lime as needed after it finishes. The chicken manure and coffee grinds will swing the ph pretty low. RR

Thanks Roger!  some more questions:
when you say to 10% of gypsum, do you mean by weight or by volume? are there any danger of adding to much gypsum? I ask because all the agaricus compost formulas that Ive seen say to add about 3-4% by weight...
And the chicken manure? by volume or by weight?
Shouldnt I wait untill the pile have a nice smell to finish the process? There is still ammonia smell...
may I use Calcium carbonate instead of hydrated lime to control the pH Many thanks in advance!
