pins all funky

my first cakes are pinning! One of my cakes, however, is pinning in patches. And what makes it worse is that the patches are like 2 days apart. Will this ruin the timing of the first flush? Would you harvest all at once (get lots of older, weaker shrooms) or harvest as they mature?
Will new pins form where the mushrooms were picked? Ifso, how long do they take to form?
edit: Oh yeah, forgot to mention that I wanted to do a dunk after harvest, will I have to scrape new pins/primordia forming (I would hate to do that)?
edit: I almost forgot to load my first pinpr0n!
My oldest cake (mushroom patch called "the shire" ):

Same cake (you can see the shire coming out from the other side ):

Other cake (you can see loads of primordia, a couple pins, and a mutant -- in the dirt, looks like hes staring at you):

don't panic dude
when the first pins get big, you can harvest those and let the other ones finish

I would recommend harvesting all of them at once. The other mushrooms in the flask usually stop growing anyway after you pluck the first from my experience.
You will have to scrape off the primordia and pins to dunk them. I would suggest, however, that you just DEC and squirt a little bit of water on the casings once a day. Easy does it, you don't want the water saturating the casing and dripping down the side of the cake, bruising the myc. I've done that many times, and its not good, but not dire.

I was just talking from my experience. You're probably better than me though, so I'd listen to you about this issue.
DEC is a "Double Ended Casing." I've gotten the best results with this method, save the dunk and roll, but the cakes take much longer to pin that way, and the difference hasn't been much for me. To each, his own, I suppose.
Once again, congrats on that Cambodian crop, Tuna!
