would it cause any problems to pick a few shrooms off my cake and let the rest keep growing?

Picking the shrooms at any point from a cake shouldn't damage the cake or the mushroom...just that if it's mature it'll be at the height of its potency and yield.

Define mature. IME maturity and potency have little to do with each other. Most people recomend picking before the veil tears for maximum potency, meaning while still "immature". I have found that a small fist-full of aborts, or crunchies as I like to call them, took me alot furthur than 4g or 5g of fully "matured" fruits. The only reason I ever wait for full maturity is for collecting prints. If you're just planning on a psychedelic psnack, I wouldn't bother waiting that long, as you increase the risk of a REALLY BIG MESS all over the interior of your grow chamber. My first time I thought, "Wtf is all this purple dust? Holy shit, I fucked something up!" On a completely different note, I've read numerous times from other Shroomery members who know an ass-load more than I that picking just a couple here and there, or simply not waiting for all the others to catch up can stun the myc, causing them to have to recover before fruiting can commense...just something to think about. Anyway, I hope a lil of this seemingly senseless scribbling is helpful or informative in some small way.

Maybe I'm wrong but I think the point here is that more mature == larger shrooms. And larger shrooms == more psilocybin.
So yes, it should be safe to remove some shrooms and continue fruiting the rest. The longer you wait, however, the more you'll get. I only have two flushes under my belt but I can personally attest that once the shrooms have become large enough to be worth picking they're growing very fast. Another 24 hours could literally double the weight of your harvest.
So it's all a question of whether harvesting early is worth that sacrifice.
