Hey, just wondering if steam gets in between the foil and the lid during a boiling sterilization will the substrate be compromized due to the addition of too much water?

Solve that by putting some tape over the innoc holes.

If you had the foil on nice and tight I don't think it would do too much. Wait for someone who has done it before to give you an answer though.

no its fine. you'll get some condensation inside the foil its normal... not a biggie. make sure the foil is on tight and as long as it was you're cool. don't tape over the innoc holes before sterilizing, a) it melts on and is really hard to get off and b) a vaccum gets created in the jar when you pull the tape off it sucks in a bunch of "dirty" air... niether a good thing.

Most tek's and log's I have seen put some sort of tape on before sterilization. I personally had no problem with duct tape metling on, and wouldn't the dry verm barrier protect from the "dirty air". I mean, your jars incubate without tape on them...

sometimes if excess moisture forms on the foil it will drip to the lid and leak in, wetting the dry vermiculite, normaly it's not a problem

yeah a lot of teks do show that... and a lot of the teks are a little outdated and don't really reflect how most people actually do it. there's no need for tape at all really because of that verm barrier you mention. but you'll know when you've created a vaccum, pull up that tape and it sounds like you're cracking open a soda can. yeah the verm layer protects you but a rush of air going through it right at the get-go isn't the best way to start off. it comes down to a matter of preference and i'm sure some tapes are more heat resistant than others... maybe duct tape doesn't melt on but try some micropore tape, the stuff practically fuses to your lid. at the end of the day the tape seems more and more like a pain in the ass and does nothing but take up your time and restrict gas exchange, thus slowing down the colonization of your jars in the long run.
either way you look at it back to the original point the steam happens. the verm layer doesn't stay totally dry either, when you steam/pc your jars, the moisture in the jars also turns to steam, and that makes the verm layer damp anyway. that's where the moisture comes from on the inside of your foil lid... it was in your jar. its still just a little bit and doesnt throw things off. allowing your jars to slowly cool, with the lid on the pot/pc, and not touching them for many hours (preferably overnight) allows things to kind of "equalize" and get back to normal. they're all just little points and a lot of matter of personal preference, as you do it you'll figure out which works easiest for you... but the pf tek can take a lot of abuse and you still do fine when things aren't perfect so don't freak out over all the little things is the moral of the story

Yeah, I didn't tape my jars, and they're fine. From my experience, if you're using a PC, you have less to worry about all-around. In fact, with my first batch, I hardly had the foil on in the first place, and the cakes are fruiting right now!
