Storing Fresh Oysters?

I'm gonna try my hand at growing some outdoor Oysters soon and just thought of something: If my grow produces as well as I think it may, how should I store all the extras that I either can't eat or give away when fresh? (I'd really hate to see any go to waste.)

Simply dehydrate them for long term storage. Then when it's time to use them for cooking exc., you can rehydrate them by soaking them in water or lightly steaming them.

Sauteing then freezing works well, so does drying.
