last night I grilled some fresh king salmon on the grill

I had planned on making a sun dried tomato, basil butter top top the fish when it came off the grill.

Well my local market didn't have the sun dried so I opted for marinated artichoke hearts.

For 4 portions I used 4 T. butter, half a jar of artichoke hearts and a bunch of fresh basil - 20-30 leaves.

Simply grill the fish for about 16 minutes - I lightly seasoned the fish with Potlatch fish season.

After removing the fish from the skin I spread 1/4 of the butter mixture on top of the fish.

Served with asparagus with hollandaise and french bread

This was fantastic and I don't even like salmon - fresh fish is the key

These portions were 8-10 ounces - an inch and a half high in the fattest part.

To check for doneness just poke the salmon with a fork - you want it to flake all the way to the skin. Most people overcook salmon - its very good on the rare to medium rare side.

Quite true. Over here nobody knows fresh fish unless they catch it themselves. Just about everything in the store is "previously frozen". Poop on that.
