I steam sterilized my jars using a pot and water. I did that for about 1 hour periodically check to see if it was still boiling, had enough water, etc. After i did that i wated 7 hours or so untill the jars were cool and showed no signs of heat in the center. I inoculated each jar with about 1mL(cc) spread between 4 holes. When i went to inoculate them after i took off the aluminum foil and smelled by the cap they had a rancid/sour cream like smell. Not very strong but still noticable. Is this bad? Did i F these mushies up? And by the way its only been 1 day since I inoculated them. Also when i took the aluminum foil off the jars some had a very small pool of water in the middle of the cap but not in the holes. Any help would be appriciated.

Doesn't sound good for your jars, steam sterlising isn't very effective for a start.
Im not expert though, for them you want to be in the cultivation forum. A mod will probably move this for you

When done right steam sterilizing is a sure thing. All that is needed really is just a large pot and some jars with a thin towel between the jares and the bottom of the pot.
I dont know much about that stale smell. I never got my nose close enough to smell that if the smell had been present. That would have compromised the sterility of my jars. My guess is that it should definately still smell like what ever your jars are made of.
Water has seeped into a few jars when I have sterilized, which sucked, but I learned something and that certainly wouldnt have made them smell bad. Those jars turned out fine but were not as productive.
Part of the trick to it is to make very tight foil lids.

This definitely belongs in Mushroom Cultivation. Your question cannot be answered with any degree of certainty. You need to wait a few days to see if the smell is a contaminate. In most cases, a sour or fermented smell is a contaminate. You'll have to wait at least 3-5 days to see if the spores germinate and/or a contaminate takes the jar over.
Depending on the type of contaminate, you could have unwanted contaminate colonization within 2-4 days. You'll know if there is a problem very soon.

Does that mean you can get away without having a pressure cooker ?
I know your suppost to boil them 3 times leaving a day inbetween, but i thought even that wasn't very good.
That's good news if it can be done with a good rate of sucess

Seriously, I know very well how this works. NO NEED FOR A PRESSURE COOKER. I have had maybe a few points below 100% success.
MAke tight foil lids ontop of the lids that came with the jars.(you dont even need those lids you get with the jars). You can just use two foil lids(one to puncture through, and one to instantly cover after inoculation( they become sterilized foil tops), use more foil after that if necessary.)
The foil lids need to be tight so the steam doesnt make its way inside the jars, though when this happens all you have done is compromised the water content in your jars which leads to weaker fruits.
When using pint jars you want the water 1.5 inches deep on each jar, or less depending on how violently you want to boil them. You never want them to boil so hard that they bubble up around the height of the lids.
At a mid-range boil this takes about 1.25 hours to 1 hour and 40 min. I prefer to boil for a long time(1 hour 40 min.).
DOnt breath on inoculation sites when doing the deed, and use a clean room with no breeze.
It works like a charm. Use a thin towel between the glass and the botton of the pot so the glass doesnt break(unlikely anyways)

You say the jars showed no sign of heat in the center? You didn't open them and check did you ?

They all are colonizing so no worries!! 7 of 7 jars are showing rhizoplasmic growth or w/e.

This is true if you're talking about the PF tek. If you're using whole grains of any type, it's generally accepted that you'll need a pressure cooker. I'm not sure if anyone has tried to steam whole grain multiple times allowing time in between for endospore germination or not.

Cause' they're 16 and living at home. They don't want to explain a pressure cooker and their parents won't let them use the stove by themselves cause they might burn themselves.
