Questions about water content of pasturized poo.

I recently pasturized some local product and allowed it to drain for an hour before spawning my jars to it. 3 days later, it seems that my growth is rapid on the surface and slowly decreases at the bottom of the container. Does this sound like a problem due to water consistency? What do most of you guys do to drain it out well?
I both sqeezed the pillow case and individually applied pressue to the manure in a colander, but I think it was still entirely too wet?
Does anyone allow their manue to dry out overnight outside? Would this increase my chances of contamination, or would it work out better in the end by introducing it to more beneficial bateria in the environment.
I'm spawning 3 quarts to 6-8lbs of poo in hopes of rapidly colonizing the substrate. Let me know what you think.

you should squeeze by hand...
if you have more than a couple drops come out when squeezing you have too much water.

A mentor taught me that, after you pasteurize h/poo. How you test/adjust the moisture content is to pick up a handful. Give it a gentle, but firm squeeze. If it drips a few drops, it's good. If not, add more water (boiled & allowed to cool). If moisture pours out, with a firm gentle squeeze. It is to moist. If so, mash it in a colander, until it will pass a squeeze test.
Another way is to buy a HB-2 Kelway PH / Moisture meter. (Stamets uses one) http://www.cspoutdoors.com/noname5.html About 68 to 74% is ballpark moisture saturation range.
