bacterial contam

I seem to be having problems with bacterial contams. I get my cakes all white, but when I open them some of them smell sickly sweet. This is an issue, since I have had this problem every time I do a new set of jars. I get the cakes white and give them air through the air hole by removing the tape from the injection hole. Do you think this could be giving me the contams? Thanks guys for the help.

thanks for the reply. I was using a pressure cooker for a hour then i switched to a staeamer so i can do more jars at once. I steam them for two hours. Seems i am having this problem after i give them air to release co2.I take tape off one injection hole .

They need gas exchange all during colonization. The purpose of your verm barrier is to provide a filter against contamination. If you fail to remove the tape from your holes, the verm barrier gets wet from your jars moisture, then it no longer serves as a filter. Also, anerobic conditions favor bacteria over mushroom mycelium.
Next time, remove the tape after you inoculate. RR

don't mean to jack the thread but its somewhat related.
lets say i don't use verm. Lets say once an inch or 2 of the top is fully colinizied could i take the top off for more air?

If you don't use verm, then you must use a filter of some type. They need gas exchange from the day of inoculation. RR
