A little Luck?

Ok so toole has these 10 verm/brf jars..they were victums of the unknown and decided to stop developing mycelium networks about 2 months ago..so toole got bored waiting on these other WBS jars and decided to pop into toole's 10 verm/brf jars and play with them for a bit 
toole opened all the jars and removed all of the uncolonised verm. The colonised bits were placed in zip blocks, crumbled and cooled in the fridge for a couple hours. From there toole laid down about 3/4" of dry verm in a aluminum tray, then misted, then laid down the spawn, followed by a 1" layer of sterilized substrate; misted once more, placed foil over the top and sat the tray in a spare tub at about ~76F.
That was last night, here we are not even 24 hours into this project and large groups of mycelia are poking through the top layer.
So, toole is wondering about proper timing on misting/fanning-
Should toole leave the foil on ?
Should toole just follow a pinning stratedgy at this point?
There is a decent amount of moisture building on the surface, droplets on the mycelium that's poked through as well.

once you have a good solid breakthrough of mycelium into the surface, its time to take the foil off and initiate pinning strategy. it will continue to colonize the casing a bit even after you move it to the fruiting chamber...so if you have mycelium showing now, its definitely time. read hyphaes post on pinning strategy if you havent, he has some good info in it.

some prefer to patch, but they do this to ensure a more even 'breakthrough' of the mycelium. if you have only 1-2 big spots poked up on the entire surface, with NO white/wispy mycelium laying just beneath the surface in other areas, then yes...go ahead and patch those two big areas, if you feel you must.
as for myself and others, patching is rarely done, except when a not-so-even break though happened, which is usually due to not-so-even substrate and/or casing. once it hits the visible areas of the casing, most believe its time. most also believe that unnecessary patching causes the mycelium to expend too much energy colonizing the newly patched areas.
