My first omelet.

Ingredients

3 large eggs
1 tbsp. butter
1/2 pint of assorted gourmet mushrooms
1/3 cup of milk
Shredded american/cheddar cheese




Begin by sautéeing your mushrooms on med-hi in the butter.  I don't like them chopped up, just sliced.



Take a 10" skillet and put it on med heat.  Spray with some Pam or something.


Add your eggs and milk to the bowl.  Whisk together thoroughly, being careful not to make it foamy. 



After a minute or two run over to your faucet.  Run a little water on your fingers (not a lot) and flick it onto the pan.  If it sizzles and disappears you're good to go.  Pour your mixture into the skillet.



Let the mixture cook for 20-30 seconds, then gently tilt and swirl the pan to allow any runoff to fill the rest of the pan and cook.  Add some salt and pepper.



Once you can fit a spatula under it without it falling apart, sprinkle your filler on one half.  Fold the omelet over, sprinkle some more cheese on top, cover with a lid for a minute or two...and voila.  BANGIN' omelet  :stoned:

Why don't you want to make it foamy??? The more air bubbles in the mixture the lighter/fluffier the omelet will be!

BTW, I've been making omelets since I was about 10  :smirk:

Ive got just about everything to make omlets most of the time.. I need to make them more often.

I like mine with salsa on top.

Indeed.  I like mine light and airy.  10-15 minutes whisking by hand.
