straw/rice fermentation

ok, last one for the day....

to start at the beginning..

once long ago, i tried preserving myc. cultures on plates of just rice flour and water. the patty was solid after cooking, and innocualted as normal. everything turned white, and after a month or so after the myc was clearly ingesting the patty, grinding it up in a blender with water completely colinized my pf jars in about 4 days. Awsome stuff.

But, when the attempt of innoc. anything else (specifically straw, dung, hay, corn, birdseed, pda medium) everthing went sour! Now the setup was a deep tank, and the substrate was about 4-5 inches worth everytime, with the walls well over 6 inches over the substrate, with glass covering it all. It was aired out once a day, and misting/fogging was used.

But, things would smell sour, and the PDA plates litterally boiled up and flipped over in the jars!

It was obvious fermentation was occuring with the sugars from the straw or the dextrose or sucrose from the pda plates.

the experiment was later repeated with a much older rice patty, one that grew for over 6 months, and shrunk to half it size, resembling a bite size burger patty. Also, the patty was never allowed to pin/fruit, so it seemed like a chunk of pure myc. Same effect on all mediums.

My question is, is there a possibility of using this type of innocualtion, but modify it so it never ferments on a bulk substrate?? also, if i were to use normally birthed PF jar (before pinning occurs) , how can i prevent fermentation there to occur as well??

Finally, if a deep tank is used in any of the cases, during colinization, does settling of co2 during the colonization process a concern when using this rice mix. I have seen rice to be somewhat finnicky this way, but im sure its not contamination, as there is no growth of any other molds, only the substrate turns to slime.

And tries to make saki.

any ideas?

so youre saying that the turning to slime is due to contamination? also with the straw? but how? i ran i control and it never changed! only when i added the rice patty...

also, if a high concentration of rice flower with mycelum is present in an inculation liquid, would the worry of fermentation be present in a WBS tek with this mixture??

anyone??
