I can take this question several ways...

After your pf jar looks fully colonized on the outside of the cake...
you should let it continue colonizing for 2 more days to make sure that the inside of the cake becomes fully colonized too.

If your cakes are fully colonized...
you should birth them within a week or put them in a frig or cool place to store them til you are ready to fruit them.
keeping the jars cool...will stall the mycelium and keep it in a suspended state...until you are ready to use it.

Keeping fully colonized pf jars in the incubator after they are fully colonized for long periods of time is going to become counter productive.
The mycelium will continue to eat the brf in the substrate and will eventually shink up the substrate.

i do it as soon as i notice the surface is 100% (well, i dunk, then birth).  some like to wait a day or two to make sure the inside is done.  either way as long as the surface is covered with myc its safe to take out of the jar.

Yes you can do that.

2 weeks is nothing for the frig.

you should be fine.
