question regarding big 21 quart PC!! please help!!!!!!!::::::::::................

i recently got mi 21 quart PC, and since it was my first time using it, i think i overcooked my half pint jars that contained the pf tek.... i actually got it up to 15 PSI... and left it there for like 45 mintues or more.... it never got below 15 PSI once it got there... is this where i went wrong???? i looked at the jars the day after, ( some got water in them) and it felt all gooooey like... kind of grose.... any way, some i threw away and i kept 4 wich looked kind of healthy.. they colonized the outside, pero the inside was kind of gooey as well... so... was the over coocking the PROBLEM!!!>>>>????? im thinking it is... since i think im supposed to LOWER DOWN the fire temp once it hits 15 PSI.... IS THIS CORRECT??????????? please give especifications regarding these PC..... im using the PF TEK by the way peace in advance, take care people

gooey means water got in, like you said. you didn't overcook.
make sure to not overfill your pc with water. just an inch or two at the bottom will do ya. wrap foil TIGHTLY around the tops of the jars. this should keep the water thats in them, in them, no more, no less.
when PC'ing you want to start with higher heat to build pressure, then turn heat down to maintain 15PSI. that's the key word, maintain 15PSI. so if it stayed at 15PSI without turning the heat down, you did fine. stoves are all different, yours must need to remain at a higher setting to keep the heat up. regardless what heat your stove is putting out, the pressurized steam keeps the inside of the PC at around 250 degrees (when at 15PSI). if i leave my heat turned up, my pressure keeps rising to 20.. 25... then boom all hell breaks loose as the valve lets go and steam goes everywhere... that's what you want to avoid and why you'd turn it down... otherwise, you're good.

so maintain 15 PSI for how long though exactly??? so should i or shloundt i lower it once it gets to 15PSI ??? or just leave it there for how long? sorry to be hard headed... i just dont want to fail this time..

you want it to stay at 15psi. so if that means leaving the stove turned up, then leave it turned up. you can try turning it down if you want, but if the pressure goes below 15psi, turn it back up.
once its at 15psi, keep it there - and start counting, 45 minutes works. i like to go for an hour to play it safe, its only another 15 minutes of my time... at that point i turn it off and forget about it til tomorrow so the pressure can drop naturally, and everything will cool down.

I too had problems with water getting into the jars. What ended up working for me was a double layer of foil. Don't know why it worked, but it did. And, of course, keep the water level down. Otherwise, your times are correct.

Keep your jars totally out of the water if water getting in is a problem. Put a rack or shelf in there to elevate them. RR

Put something on the bottom if it did not come with a divot plate like most of them do, if no divot plate them a towel works well. 1 inch of water is all that is needed in the bottum of the pc. And make sure the foil is wrapped tight around the top of the jar.

very very very good, thanx again for the feedback..
So.... does this mean once the PC guage sets to "15 PSI", i should leave it there for 45 minutes, no more no less than "15PSI" for the whole 45 minutues?????? or once it gets to "15 PSI" lower it a bit? if so, how much, for how long?
i know im hard headed,, but bare with me,,, i dont want to mess up again...
