Newly Birthed Cakes

These cakes have both been birthed recently. The one on the right came out last Friday, the one on the left came out on Tuesday.



Both were dunked in the fridge for twelve hours. The one on the right was rolled in verm. The one on the left has been kept in its original jar. The one on the right has been in a coke bottle terrarium. Both have received fannings several times a day for air exchange and are being kept in a 78 degree environment. The coke bottle and the jar both have drips of condensation all over the surface so I assume the humidity is high enough. Should they have pinned yet? I've heard a lot of wildly different time frames on this forum for pinning after birth... do these two cakes look good? When can I reasonably expect some pinning to start?

at least 6-7 days.

more like 10-14.

sometimes longer.

they look fine but they're not there yet.  you'll see little tiny white lumps start to form, then you'll see the tops of them start to change colors to a brownish, this is the very beginning of the cap, and there's your pins... keep it up and wait just a little longer it will be soon. :thumbup:

looks good, if they are cubes, they should be dunked at room temp for quicker pinning.

no, dunking in the fridge is the correct way to do it.

bacteria can swim. surrounding your cake in water and leaving it at room temperature is an open invitation for bacterial contamination. in 24 hours time it could be totally overrun. refrigeration during the dunk prevents this from happening.

don't get this confused with the "cold shock" thread that's been up recently. its true you don't need to refrigerate cubes or otherwise "shock" them with extreme cold to get them to pin. in this case, you aren't attempting to shock them, you're just trying to keep bacterial growth down while you dunk. that's two different purposes, and in this case, refrigeration is appropriate.

Would you reccomend rolling the other cake in verm too? Or does the stuff I'm using look too coarse?

If you keep vermiculite in a sealed bag, there's no need to sterilize it; you should also apply casing layers to the bottom (thick) and top (very thin) of those cakes. You can feed water with a dropper or syringe that way. They are looking fine, though. GL.
