In some cases you will only know what to look for if you have educated yourself. There is no way anyone could sit here and tell you what to look for in most cases. You need to look into your region's mushrooms and you need to distinguish the differences between the ones you are looking for and the ones you need to stay away from..

Don't eat the ones that turn blue, I heard they've got some chemical in them that makes you go crazy...silly-sighban or something....

Just learn which psychedelic mushrooms grow in your region, and then don't mess with any others unless of course you want to poison yourself.

Considering that there are hundreds (if not thousands) of poisonous mushrooms species, there isn't much in common between all of them other than that they are poisonous and mushrooms.
The only way to reliably tell if a particular mushroom is edible or poisonous is to accurately identify it to species.
For most mushrooms this is far easier said than done. For the group of mushrooms commonly referred to as LBMs (Little Brown Mushrooms) it can be pretty close to impossible. Unfortunately, the majority of active mushroom species are LBMs. LBMs also include common deadly species such as Galerina marginata.
Having said all that, there are subgroups of poisonous mushrooms that can be identified fairly easily. Most species in the genus Amanita, for example, are not too difficult to identify to genus, and the vast majority of mushroom poisoning fatalities are due to Amanitas. The genus Amanita also includes several species that are considered fine edibles and some that some people list as being active. Because accurate identification to species in Amanita is not trivial and a mistake can result in fatal poisoning the entire genus is generally avoided for eating. Since Amanitas have white spore prints, some people even expand that ban to all white spored mushrooms. Certainly there are not many active species that have white spores, although there are a lot of excellent edible species.
Perhaps a better approach would be to learn to recognize all of the deadly mushrooms. There aren't that many, and being able to say with certainty that the mushroom you're thinking of eating isn't deadly poison is a valuable skill for anybody who is considering eating wild mushrooms they find and identify themselves.
Happy mushrooming!

I thought I remember reading somewhere that a lower vulva (cup-like sac at the base of the stalk) was a sign that it was likely poisonous... is there any truth to that statement?
Also, on an unrelated note, in one of the guides I have, it lists "choice" under the edibility catagory for some mushrooms. Does this mean it's not great, but stomachable? Or am I misunderstanding the use?
Thanks, Dave

The vulva, or bulb like base is not necessarily a fool proof way of identifying poisonoues mushrooms. It is a characteristic of most mushrooms of the genus Amanita- of which most of the species in this genus are poisonous and sometimes deadly. However, as with the Fly Agaric (Amanita muscaria), many people make a practice of cooking and eating these... Some experience horrible gastrointestinal upset and vomiting, others describe wonderful mind altering experiences. The effect is highly subjective.
Choice means good. A choice edible is one that is preferred above others of the same kind or set- in this case, of other mushrooms of necessarily lower quality culinary value.
