What causes the mushroom to Release spores

So lets suppose that you have all the right optimal enviromental conditions created. What causes the mushrooms from tearing the veil and having the cap open up and sporulate? Is there anyway to indefinitely keep the mushroom growing? You know kind of like just keep on vegging weed and it will just keep on growing bigger and bigger...
Is it that the nutrients are running low? Water? What is it?

Well the mushroom is the fruiting body of the mycelium, and are not plants,
It's also a "sexual organ", and it gets very horny near death, and must have sex, 
I assume you ask this so you can grow 'giant' mushrooms, I dont see it happening, but old hands have bigger shrooms then I, but that is experience and not what you asking about.
I cant give you the answer definitivly but have you read this,Spore release and dispersal

I was reading up on making spore prints/syringes. The tutorials weren't clear as to when you should attempt to catch the falling spores. Of course after the veil breaks, but how long after? Immediately? 24 hours?

I think it all depends on the nute content of your substrate, water content as well as how many pins are going to be mature...the smaller your pinset the bigger the mushrooms are overall(but u get less weight)
example:
straw/poo/verm cased with verm piles(creeper strain)


and a cased burma with the same substrate and fruiting chamber


the burma yeilded better weight
