Two questions before I inoculate.

I was going to incubate the jars under a dark towel outside, but the temperature goes into the high 90's for a few hours during some afternoons (I live in Florida). Can that temperature do any damage, or is it safe to let them colonate in that heat? Apart from some of the blazing noon temperatures, it's usually 80-85 degrees, probably 78 on the coldest night. If this temperature is too broad, then I'll probably just put them next to a heater.
Second, I've read all the guides to casing but I don't understand the final step: place your casing into the fruiting chamber. I'm just using one aquarium for my first time serran-wrapped on top, and the cakes will be on a wire mesh stand above a layer of perlite. How would I fit my casing in there? I can buy another container, but can it touch the perlite and not soak up too much water?

I'm told that spore death occurs if the temps hit 104F for a duration. They can survive higher heat for shorter times.
I'd say that as long as you keep it under 100F you should be OK, though that's gonna slow your roll.
Can't you rotate 2L soda bottles filled with ice or something?

I've only done one grow and it's only up to the spawn phase so I can't be much help on your casing layer question.

Oh, well I'm doing 5 half-pint jars, and I my case 2-3 or all of them. I didn't think a half-pint was that small until I got the jars, so I might actually do all of them. But originally, I intended to have 3 cakes on the wire mesh stand, and case two.

OK, so you have a perlite terrarium that you may put a few cakes into and you want to know where to put the casing you are going to make from the other cakes.
So there are two ways to fruit a casing, both explained here: http://www.shroomery.org/index.php/par/24283
You can make the casing in a rubbermaid bin with a lid that will serve as its own fruiting chamber (humidified by the casing itself), or you can case in an open try and put it inside a larger fruiting chamber.
In the first case, you don't need to put your casing in the aquarium you have and can just use it for cakes. This seems easiest to me (it's what I'm doing for my first casing right now).
In the second case, you could put a tray inside the aquarium if it fits (along with any cakes in there). It should be OK to have it sitting on perlite, except that only exposed perlite will evaporate water and humidify the fc. The perlite under a tray will just sit there wet. If the aquarium is not big enough, you could buy another large bin to use.
