I made a post a couple days ago asking people's opinions about using Fruit-Fresh. I reported that there was no bluing on the mushrooms that were dried with a nice coating of it. here are some pictures of mushrooms with and without the fruit fresh.
some disclaimers apply. all these mushrooms were taken from different cakes, and the ones shown in my pictures are 2 different strains from those different cakes. the mushrooms that are blue were picked and put straight into the dehydrator.

I didn't catch your post a couple days of go..but I would first say, you can't compare different strains when trying to determin a products effect. You need to have controls. Your nicer looking pair of mushies look just like my last batch, and I didn't use any additives. I'm interested in seeing results tested on the same strains, at the same time of harvest...

some control tests are in the dehydrator right now. ill post pictures of those when they are dried.

same strain, same cake. the blued one is probably about the same age, but had a cap that was opened more than the previous one. youll notice that the bluing is really bad at the base where it was cut. when i used Freshfruit before on other stumps like this the bluing almost completely disappeared. the blued mushroom is also not as dry as the other one has been in the dehyrator a longer time. the fresh fruit doused mushrooms do seem to take a long time to dry, this is probably because the sugars form a sort of glaze on the outside of the mushroom. this could have positive and negative effects: with fresh fruit: takes longer to dry tastes a lot better! (frosted ooms anyone?) probably increases the weight, so make sure to account for that while weighing doses
without fresh fruit: faster dry more bluing across whole surface accurate weight looks less shriveled when dry
here are the pictures, i know it is hard to really get a good idea of the colors in it. it is very cloudy outside and lends a bit of a bluish tinge to the pictures when compared with the previous pictures in this post. It would be nice if others would try this as well. I did a lot of reading about everything I could and there is some information about Fresh Fruit, but everyone seems to put some in water, then soak the mushrooms. As another control Ill try that with the next mushroom I can, but it seems faster (at least into the dehydrator) this way and maybe the sugar coating locks out air enough to preserve more psilocin.

I'm not sure which is which in your pics. Did freshfruit cause all the browning in those pics? I thought it was supposed to prevent fruit from turning brown. That's strange.
I think the sugar in it is probably a bad idea. It probably will encourage bacterial growth and decomposition. I would use regular ascorbic acid instead of something with all that sugar. They probably put the sugar in it to mask the taste of ascorbic acid and keep the fruit tasting sweet.
Here is another interesting tidbit from some experiments I did in the late 90's. Ascorbic acid not only prevents bluing, it also reverses it. Here is a cool experiment... Place a shroom, some abhorts, or some useless bits of shroom in a small volume of water. Optionally mash them up a bit to speed the reaction, but it works fine without. The water will become a nice blue color in about 15 min or so. When you are satisfied with the bluish color of the water add some ascorbic acid to the water. Use regular ascorbic acid, some crushed vitamin C pills, or possibly fruitfresh. The blue color will rapidly disappear and the solution will be perfectly clear again!
I have yet to determine weather the oxidized psilocin (blue color) is converted back to psilocin or if it is converted to another, as yet undetermined, compound. Either way the ascorbic acid is a potent antioxidant and will protect your precious product, if not actually convert oxidized product back to an active state.
If anyone wants to help out in determining if ascorbic acid actually restores activity let me know. I don't grow anymore so I can't do any experiments, otherwise I would quickly solve this troubling riddle.
Here is what I've theorized the oxidation product to be... I've called it psilocybeen because it's been psilocybin and psilocin.

Why the hell would you wanna make them brown, which looks disgusting, instead of nice and blued cubensis? Sugar, lets think about bacteria and storage. Not a good idea.

Do you think maybe the extra browning is from the sugar caramelizing in your dehydrator?
