Is it cool to use this for misting, dunking, LC's and such?
De-Mineralized Water On the bottle it says SUGGESTED USES: Laboratory Solutions, Metal finishing, Batteries, Steam Irons, Car Radiators, Metal Finishing, Boilers & Cooling towers

I would think it would be fine. Its just H2O with all impurities (ions) removed.

it may not be, if it says non-potable then there myst be a reason, chemical distilation perhaps

looked a little but I can't find it??? I don't want to mist my casings with some funky shit+ I want to make a LC
You could just compare with a similar US brand

It's probably good to use. I assume it's just de-ionized water, which is just a step in purity above distilled water.
The reason distilled water is sometimes considered not good to drink or for some uses is because it can leach out minerals due to it's purity. Chemicals and ions move from greater concentration to lower concentration. Distilled water can kill a lot of things simply because it robs them of essential vitamins and minerals.
It's still good for spore water and solutions where you don't want things to grow in. I always use mineral water or purified drinking water for media and distilled water for solutions were you don't want things growing.
I would do a little more checking on exactly how it's produced or what might be in it, or try it and find out, but I'd assume it's just distilled water. Some places consider distilled water good for drinking, others don't. I personally wouldn't drink distilled water.

thats exactly why his is considered non-potable, theres several methods of handling the water to 'de-mineralize' it but most likely it's just distilled

will it rob vitamins, minerals & nutrients from casings/shrooms if I were to use it for misting or should this only be used for LC's & Spore Solutions

actualy it may, distilled water is 'agressive', it would actualy pull iron and other minerals from the pipes in your home, I use spring water for almost everthing but thats what comes out of my tap so I dont have much choice
I'd use that demineralized water for syringes only, you can use tap water just boil it for about 10 minutes to remove disolved chlorine and fluoride.
