No numbers - my stoves temp ranges are all fucked, but I usually have it up pretty high.
Make sure to pasteurize for a while.

I sterilise in bulk and save for later
I put in jars so the caseing is very light and airy, then put the top on rubber side up and PC for 60 min @ 15 psi
use what i need then save the rest for later

Fill quart jars nearly full of casing mix.
Use either a grain lid setup or leave a new lid very loose.
Cover jar with aluminum foil and crimp tightly.
Place jars in a large pot/pressure cooker and place a weight on them if they are not tightly packed. No floating allowed.
Fill large pot/pressure cooker water level to 2/3 up the side of the jars.
Cover the large pot/pressure cooker, you're going to boil, not pressure cook.
Boil the water for five minutes.
At the five minute mark shut off the heat but don't touch the large pot/pressure cooker. Be sure the lid is still on good.
Leave the large pot/pressure cooker to cool for two hours.
Take the jars out of the large pot/pressure cooker.
Remove the aluminum foil.
Allow jars to cool for 12 hours.
Never incubate casing jars. Store them some place cool and dark until you need them.
Now you have great pasteurized casing to use whenever needed!!

This is sterilizing, as you mentioned. There is certainly a difference between sterilizing and pasteurizing. People do it both ways. I suggest pasteurization.

hydrated lime can be very touchy. If you are not careful it can make things much worse than better. It is hard to mess up with oyster shells, if you even can.
I use lime to adjust the ph initially to where I like it (7.5). I use oyster shells to buffer the ph over the long term. They don't work as an adjuster for me, just a buffer.
So I guess I'm saying use both and be cautious with the hydrated lime, don't use too much.

I would go to a local feed store and get crushed oyster shells for like $2 per 20 pounds or something.
It is my experience with teks to do exactly as they say. Whatever tek you choose, follow it to a tee. Do whatever is needed to not miss anything. Every ingredient and detail is in there for a reason. Just because it doesn't say why does not make it unimportant.
Oyster shells are easy to come by, and super cheap.
