Should I pasteurize or sterilize the casing layer?

I am using 50/50+ casing on top of rye. I was wondering if it is better to pasteurize the casing or sterilize it. I've heard that pasteurization can help keep good organisms around that will make it harder for bad ones to take over. Any truth to this?

I nuke the casing layer,

Mix, nuke 3-5 then stir, nuke 3-5 let sit until cool,

Sterilizing/pasteurization by nuking, I say that cause I dont have temp readings but I have not had a problem with the layer.

I sterilize my casings. Haven't had a problem. It really up to you, if you get contams pasterizing then go the other route vice versa.

I bake it at 400f for 45mins then let it sit in outdoor air to cool.

I load it up in quart jars , use the lid the way it's meant to be , rubber seal down , and can them . Stays good for months and I haven't had contam problems yet .

HC that's what I was doing. The first casings I made I made in a glove box no problems. Then I moved to a bigger area and did it in open air. I got a contaminate that time. Basically I'm just trying to narrow down as many possibles as I can before I case this next batch.
