doesnt always happen, I sat for an hour and a half waiting for my meal at one resturant, aparently the ticket was never turned in,the manager decided to make up for the wait time by comping my drink, it was Iced tea.
another resturant I waited for a table for over an hour, the hostess seated her friends and other employees before she did myself and my pregnant wife, I asked for the manager that time and made a complaint, a couple others verified what I said and were equaly upset as they'd waited for some time as well, after we were seated the manager comped a $4 appetizer
in both instances I refused the 'freebie' and paid the full price, I also never returned to either resturant and told everyone I knew about the experience, one of the places went under a few months later.

yeah, a group of us went to EastSide Mario's after the winter gathering for lunch and waited almost 2 hours for our food, and when we complained we were given total crap about why it was taking so long, they said they were really busy, there were only 12 other tables in the whole resturant, the manager comped out drinks, all sodas or iced teas and gave us our food half price, so basically because it was lunch saved us all $2.....worst experience I've ever had any where, I don't think I could ever set foot in any eastsides again.

that probably turned out to be the most expensive meal ever

I'm not saying restaurants can't do shit in the sense that walking out without paying is legal; I'm saying that, in most cases of "dine & dash", the perp gets away with it because the restaurant doesn't have the resources to chase down and detain the villain, and the negative PR that might result from such an episode is bound to cost the restaurant business, and losing business is much more costly than losing food, most of which the restaurant throws out at the end of the day anyway.
New restaurants trying to make a name for themselves do so by kissing the asses of everyone who walks in the door. These are the establishments more likely to comp an entire meal than, say, a "staple" establishment that has a strong consumer base and couldn't give less of a shit if you have personal issues with the service. So your best targets are the kinds of places where the manager makes rounds, asking all the guests if everything is OK, etc. This is evidence that they are eager to please. If you call a manager over in such a place and make a complaint that sounds halfway legit, and you make it apparent that you are going to throw a fit if you are not satisfied, then yes, your food will be comped.
It is more important for a restaurant to retain business than retain food. Working off this assumption, and without any qualms about fucking over your waiter, it is easy to get free food by being an asshole. I've never done any of this, but I have been a waiter and it has been done to me.

i changed my mind. im doing this.
i created a template business style letter and i have a list of 20 corporate addresses for restaurants.
everything from bakers square to olive garden to unos to red lobster.
fuck ya free food!!! woo hoo!!

This man knows what he's talking about, I've managed multiple restaurants and you better really have a good story and do your research if you want to scam a restaurant with out ever making a purchase. Most managers in the food industry work 50, 60, or even 70+ hours a week and know their restaurant inside and out. Over the years I've kicked many people out of my restaurant for trying to run scams, or getting unruly when I wouldn't comp their food because they didn't have a valid arguement. I am very giving when we do actually do something wrong, but don't try and run a scam, restaurant managers deal with it all the time. Complaining about the quality of the food at a lot of places will usually just get it remade for you and maybe a discounted bill. Scamming the coporate office will probably work like a charm though, just make sure you do some research and know what your complaining about. If you don't name any names no one will get fired or in any trouble, the manager just gets an email from the corporate office
If you walk out of my restaurant without paying I'll try my hardest to get you arrested. most restaurants have no shortage of cameras and if I realize you've left without paying quick enough I'll run to the parking lot and try to get your license plate number. When the police come to file the report I'll have your picture and maybe your plate numbers ready for them. It's actually illegal to make the server pay the tab if a customer walks out so your mostly pissing off the manager, who probably has a large bonus coming his way when he keeps his money in line and runs a profitable business.
