hi i just pressure cooked some jars and was wondering if i can wait 2days to nock up,have to get needles thought i had them.thanks

ya 2 days is fine

just leave the foil on them so no bacteria or germs can get on the lid, keep that shit sealed

Some people actually suggest letting them sit for a week or so to see if anything grows in them just incase something went wrong before they nock them up.

you should let one jar sit and use the rest.
I call them control jars.

Almost every batch I do has one, maybe two control jars.

This way if the control jar contams, it narrows down the search for contam origination.
If the jar does not contam, inoculate it and you're good.

If you do this with LC, you will find that LC jars that are made in jars previously used for other things are quite prone to bacteria.

I always open the pressure cooker, shake them up with an alcohal soaked rag, and then seal them in a trashbag with a swig of alcohal to kill any contaminations. The jars heat the alcohal up and you can smell it burn. It works for me.
