how do I get fruit?

I started in the beginning of Feb. with innoculation and I still have no fruit. I have several cases of 1 pint jars in variout stages of mycelial growth, and even have two lasagna trays that I cased the 25th and 26th and another rubbermaid container that I cased on the 27th. The casings are about 20-30% colonized. as I understand it, after about 10 days, I should take the aluminum foil off to get light and maybe put in the fridge to cold shock and they should fruit after that. How important is temp. changes to this? I can cold shock, but haven't been using any method of temperature regulation other than room temp (i.e. 78ish). Do I need to mist/fan my casings daily?

i keep mine at 80F. It take the cover off the casings after 10 days and then put it in a terrerium under a florest light for like 4 hours a day. I dont mist because i use a bubler from a air pump.
