I found this.....
At altitudes above 3,000 feet... ...preparation of food may require changes in time, temperature or recipe. The reason, lower atmosphere pressure due to thinner blanket of air above. At sea level, the presses on a square inch of surface with 14.7 pounds, at 5,000 feet with 12.3 pounds, and at 10,000 feet with only 10.2 pounds - a decrease of about 1/2 pound per 1,000 feet. This decreased pressure affects food preparation in two ways: 1. Water and other liquids evaporate faster and boil at lower temperatures. 2. Leavening gases in breads and cakes expand more.

At a 62,000 foot elevation, you'll need a pressure suit and oxygen just to stay alive, so I wouldn't stress about cooking jars. RR

Mt. Everest is ~36,000'. If you are going to be doing weather balloon pasteuriziation tek, you should be posting this in the advanced cultivation forum. LOL Snagletooths info says 5000' is ~12.2lbs so... 14.7/12.2=~1.2 So adjust you PC time by a factor of 1.2

The highest point in Colorado is Mt. Elbert 14,433 feet above sea level.
Apparently he doesn't know what elevation he lives at.

Most likely he meant 6,200' in which case he can simply add half an hour to the pc time and still use 15psi. RR

hehe this post lead me to learn a little more about mt. everest.
Apparently, it doesn't get hit by lightning. No one really knows why, just some theories. So for all you lightning-phobic people out there, start climbing!
