Half colonized substrate shrinking in jar....?

Ok, is it normal for the substrate to shrink as its colonizing. As the Myc. works its way around it is pulling in. Is this because of water usage? The jar on the right is contamed. That one was knocked up along with several others a week after the 2 on the left. That green shit took over out of no-wear. So my second question is, if the all the jars (except for 2) are covered with either tyvek or polyfil should they be ok? The 2 that aren't covered have a dry verm layer. What about them? And yes, I already trashed the bad jar, I sprayed it with Lysol prior to the pic. If this is to many questions in one post, sorry

its fine just let it finish
flip it upside down and tap the glass so it rests on the lid then let it colonize like that with some air between the glass and the cake

Just so everyone knows, the specs on the good jars are just verm that worked its way down from the top and the black lines are where I have been tracking its progress. No contams in those.
