pressure cooker question

A six quart pressure cooker (at 15 psi) can hold about 6 of the 1/2 pint jars, 3 on the bottom level of it, then a tray makes it possible to stack 3 more jars above that, now the question I have is how much water would be put in this cooker and it seems only the bottom 3 jars would be emersed in the water, so how would this effect things and what should be done with such a setup??

only use 1" of water. don't immerse anything.

i do an inch of water with the jars in. its not much. too much water will make it a pain in the ass to heat up and get going, but too little is probably worse.

If I only use 1 inch of water won't that evaporate though quick because I was under the impression that I had to cook these babies for 45-60 min and you mean that I should suspend everything above the inch of water?

most new pressure cookers come with a rack that sits a few inches above the grilled surface. Not necessary, just makes sure you do have some sort of heat buffer between the PC walls and the glass. You don't want your jars in contact with the PC's bottom.
It should evaporate... that's the plan. It traps steam creating pressure.

Ok so I'm gonna put 2.5 inches of water on the bottom, then a tray (a homemade wire mesh) is gonna suspend 3 jars above the water, then 3 more jars are gonna get stacked above that and cooked for about 45min? That looks good rite??

Perfect. You don't need a rack in between each layer of jars. You can just stack them on top of each other as many as you can fit in the PC.
Just be sure that you're not flooding the bottom jars.

I would put no more than an inch of water in the bottom. As soon as you reach pressure, reduce the stove to the point where it just maintains 15 psi. If you leave the stove on high, all your water will boil out. RR

It is what usually around 250 ish that you maintain 15 PSI?

I have to agree with RR I tried to use about 2 inches on my very first PC and it took foreever and I ended up getting more moister then I wanted in the jars. An inch in a good sealed PC will work. The rack only needs to be on the bottum so the jars dont rest on the metal of the PC(they might crack if on the PC) that is the only rack you need and the jars dont have to be above that, mine sit in about a 1/4in of water because my rack isnt very high but it keeps them off of the bottum. Hope this helps

in addition to 1 inch of water, I pc for 60-75 minutes, up to 90.
never less than 60 unless doing LC. for fp bags I pc for 1 hour per bag.
