first off im a little confused with the terminalogy. I am doing wbs mixed with poo in a tin baking sheet without a casing layer. What is this called? Secondly, the entire thing is colonized and is starting to pull away from the container, is this overlay? When should i put it in the fruiting chamber because I have other ones not far behind? I thought I had to wait until it was completely colonized?

colonized wbs to poo is called spawning. the poo and wbs together is called your substrate. there's no real term for substrate in a baking tin... it is what it is. to call it a casing, that would imply a casing layer, and since you're not using one, its not technically a casing!
and no, overlay has nothing to do with it pulling away from the container. its doing that because its dry and has shrunken a little.
overlay is a condition where mycelium totally overruns a casing layer, and becomes matted down, making a tough thick surface inhospitible to pins. again, since you're not using a casing layer, you can't possible overlay it!

WBS is used as a spawn,
Hpoo is a substrate, that is spawned too, like WBS,
Once you mix the spawn and the substrate, it then colonizes,
When it is fully colonized then you add a casing layer,
Once the Mycelium starts to poke threw then you start to induce fruiting,

well put. also unlike a casing and more like a cake you will want to run at 100% humidity (rH). this is beucase just like a cake you have no casing layer to provide a higher rH microclimate so you need the climate itself to be more humid.

alright thanks guys. im fruiting them right now, 96% humidy at 65 degrees with ample light. Im almost there!!!!!
