Botulism warnings

I got my P.cooker the other day, (happy cake oven) as per PFtek. I was reading through the manual, it has many Botulism warnings when canning, do I have to worry about this? I mean doesn't 15 psi's kill all bacteria?

When you want something yummy, put a happy cake? in your tummy!

They have found bacteria living under huge pressures deep within the earth. They have found bacteria living in the liquid sodium inside the primary coolant loop in nuclear reactors (very hot). They have found bacteria living under the ocean feeding from geothermal vents. In answer to your question, no, 15 psi will not kill all bacteria.... BUT, for our purposes with the typical contaminates that you find from day to day, 15PSI for 1 hr will kill pretty much everything. If you are using whole grains I would recommend a 12 to 24 hour presoak before sterilization to get endospores (the seeds of the bacteria world, for some species) time to germinate. Endospores are much harder to kill than the bacteria the form. After the presoak, drain the water and rinse the grain, otherwise you end up with nasty goo in the bottom of your container after PCing.

Botulism is one you needn't worry about. It is anaerobic.
