Harvesting Questions

First off all I would like to thank you all. It?s amazing how much I?ve learned from reading this forum over the last few months.
I?ve succeeded (some-what). My Amazonian?s are fruiting like crazy but I have an uneven pinset. Only about 20 % of my shrooms are completely mature. The others are at all the other stages. Should I pick the mature and leave the others or should I pick them all and continue with a second flush? What is the best harvesting method?

That happend with me the first time...

let the mature ones go for as long as you can, and then pick the smaller ones within 12-18 hours to achieve a nice pinset for the second flush.
