Does anybody else have this problem and/or a remedy for it? I PC @ 15 psi for 1 hour. Can I PC any less time and still acheive sterilization? When I remove my rye jars, they grains look crispy, and they're dehydrated to the point that mycelium can't grow.

what is your lid set up?
are you releasing the steam yourself when done or allow to sit for a while and cool?

i wouldn't suggest pc'ing for any less time than an hour, to be honest. its kinda vital to kill all the bad things, and that requires an hour. =/ as for your problem, based off what little info i know about your setup, it sounds like you're possibly running out of water. most of the rye berry water content is gonna come from you boiling it (simmering, not in pressure cooker), or directly adding water to the grain and then pressure cooking it. so if you're simmering your grains to field capacity, and yet still managing to dry the jars out, my only conclusion is a faulty pressure cooker that isn't sealing/keeping water in, or dry grains to begin with, that dry out a lil further once you cook them in the p.c. anyway, hope something in that long winded spiel helps.

can either of you shed light on why you two might be having problems? i.e. what kind of pc do you use, gauge or bobble-top...how old is it, does it seal well, is there water still in teh bottom after you're done...do you let the steam out when its done at exactly 60 min, or do you let it de-pressurize slowly? do you use tyvek filter disks with only the metal band, or do you use the metal lid too, with holes in it? ...answer some of these questions so we can help you guys =/
