Fresh mushroom contamination question...
    #5616675 - 05/11/06 10:49 AM (17 years, 8 months ago)

So I found a few cubes earlier in the week and I wanted to preserve them in their fresh state for the weekend. I wrapped them in paper towels and placed them in a semi-closed space. Now a few of the caps seems to have a slight white fuzz on them. Just wondering if anyone could tell me whether or not this is most likely mycelium growth or mold and if they are still safe to consume. Thanks

It is tough to preserve them fresh. A closed paper bag in a refrigerator is the best way. They are prolly starting to rot. Dry them with a fan for a day, then another day in a desiccant chamber; they should be cracker dry before you eat them.

Smell them, if it smells rank, it is NOT mycellium.  I am a chef at a restaurant and noticed on a box of gourmet mushrooms with the stems intact and seran on top, that mycellium had begun to grow on the caps, it was pretty and unlike any mold I would expect
