If a cake is blueish that is most likely from bruising right? i have handled them a lot and put them through hell (long incubation period but there were no colors while they were still in the jar). when i touch the spots no coloring/spores come off on me so i assume its just bruising. The fruits look just fine and im pretty pleased with my first go at this.

yep.

have seen cakes go blue after a dunk. have seen them go blue towards the end of a flush on their own without any handling. it happens!

your assumption is totally correct, if the blue stays where it is and doesn't rub off, its bruising. can do the same thing with a q-tip to be absolutely sure, since you can be a little more gentle when rubbing and the whiteness of the q-tip makes it a little more obvious if anything comes off.
