Slight sour smell / possible conamination?

OK I have done casing for a while now and I have the technique down pretty well.
However my last batch I did like 4-6 casings and 2 of them had a sour smell with a very light orange/brown tint on top.
What was surprising about the 2 casings that smelled this way was the mycelium on top never grew at all in 2-3 days incubating. The others did fine. So I threw them out, not taking any chances.
*Now I have a jar thats ahead of the rest and started a casing last night. Well same thing with this one but no orange/brown growth on top, but the same exact sour smell and no mycelium growth on top.
I'm most likely going to throw it out, but my question is this wet spot bacteria because the similar smell in 3 jars now?
*I use those bags you get at the market store that you put fresh veggies and other plant type greenery in, and I use that to break up my jars into casing suitable substrate. ****** you know what I mean right (the bag)?
**So could it be a bacteria that lives near fresh produce? or wet spot bacteria thats more common?

Definitely sounds like bacterial contamination; hard to say what type. Review your sterile technique.

I'm very sterile but why the same exact contam?
Doesn't it seem like its a common bacteria since 3 jars have had the same bacteria but inoculated at different times?
I'm not calming that I know what it is but does it not seem like wet spot bacteria?

yes it is wetspot. same exact thing happened to me. they werent even wet they smelled like rotten apple.

and yes, it is almost for sure wet spot or some other bacterial infection

I've had the problem with that on all my grows, except the one i'm working on right now. What did I do differently? Kept the jarbands loose and didn't use polyfill. Just tyvek...
I think it comes from poor air exchange...let those babies breathe.
