Damn they taste nice. The ones you buy in brine in a supermarket, I take it you wash them before eating as I find the brine tastes a bit rank? Also any hints for preparing them, eg adding some vinegar or something?

I went for an Italian recently and the olives there were amazing, but I cant afford to buy fresh expensive ones so Im just wondering how to make the ones in jars/tins taste better.

The way you do it is by pokeing several holes in each olive. Then placing them in a container mixed with salt. You then take a heavy weight and place that ontop of the olives. The oil presses out and mixes with the salt and cures them over time. You could then add them to a vinegar with other things like garlic cloves and chillies.
