agaricus campestris

just picked these today after careful examination I am 99% sure these are campestris or andrewii(almost identical but both choice) because of the pink gills when young and almost black gills when mature. Not to many posts about the false/meadow mushroom and was wondering if any body Else enjoys these. I like em with butter and garlic any other simple recipes that doesn't involve making a paste? whats yalls favorites

You also need to verify the odor and bruising.

To bruise an Agaricus, cut it in half vertically and scrape the inside with your knife edge hard enough to bruise the tissue. Any color changes can take up to an hour to happen.

The odor is usually strongest where the cap and stem are joined. Also try sniffing the base of the stem. If you still can't distinguish an odor try crushing the base of the stem with your fingers and sniffing again.


There are several poisonous species in the genus Agaricus. Avoid yellow stainers and unpleasant odors.

Well put, if it bruises yellow immediately or slowly and has a foul odor it's most likely toxic. The odor of the meadow mushroom or edible agaricus should be very similar to agaricus bisporus. but i must say these tasted better then any mushroom I've ever got from wal-mart!

That's not actually saying a whole lot. Wild Agaricus are so far superior to the cultivated ones that there's almost no comparison to be made. The cultivated varieties have been selected primarily for good shelf life, flavor is second. They're not bad, but the wild ones that wouldn't last on a shelf like the cultivated ones have *much* better flavor.

I have come across this Mushroom OFTEN!
It has a choice oat/meal flavor and no wally word mushroom can hold a torch to it.
Nice finds what part of TX are you in?


I will also add that I have been Cube hunting and had this mushroom fool the hell out of me from a short distance.
Its ring catching the dark purple spoor does throw one as a Cube :thumbup:
