Hey. Im using a Martha Stewart chamber and was wondering if a temp of 76 with humidity at 85 will work good? I know its not "optimal" but this is the best i can do! Thanks for any input!

For casings , that will work .
Higher humidity during pinning would be nice , but that will be good for fruiting

Hippie Chick is 100% correct.
Casings don't require as much humidity, because the casing holds in the humidity for the substrate I believe.
If you can manage a way, raise the RH to around 95 to 100 during the pinning stage, and than drop it back down.
76 is a fine temp, a bit on the high side but well within the limits.
Give er a go, I think you'll be fine even without the humidity jump for pinning.

that is fine like the two above said. when you goto initiate pinning... mist the casing layer good but don't overkill it.

Damn... I fiend out and spray those guys like 3-4 times a day....
At this temp\humidity (i can get temp lower, to about 73) is that too much? If so, what would be the right ammount? Thanks a lot!
