Bulk hpoo grow question

This is my first grow and I decided to jump in head first. I made 6 bread pans of horse poo according to roadkill's tek. The first one began fruiting last week thursday, and I didn't get the pinset I would like. Three of my substrates I removed from the pan and just fruited the poo cake. The other three I gave casing a shot. The one that is fruiting is just a poo cake. My question is, how do I get a better pinset? I read the pinning strategy article by Hyphae and tried to follow it the best I could.

The strain is Tazmanian. I have the RH around 92, fluctuating between 92 and 95. I fan them by hand 4 or 5 times a day. I am having a problem keeping the temp constant, however. I live in an apartment building that has heat included with the rent and my landlord has turned the heat off for the summer. Sometimes at night it drops down to about 60 degrees. Could that be the reason for my bad pinset? Oh, and they are getting light about 14 hours a day.

One more question. Below are some pics, one of the casing that is fruitng and the two other pics are from a substrate tray that has been in the incubator for two weeks. To make it I used two pf jars. I have noticed on everyone elses pics of poo grows that thiers are more solid white, but mine are only bright white in the places where there are chunks of the brf cake. Is that okay, or does it need to colonize until the whole thing is a consistent white color? I am incubating them at 82...
