I wait 3 or 4 days to birth after jar is completely colonized.

depends on how long it took your cake to colonize. if it was slow give it longer. i always just gave it 10 days. took them out of the incubator after about 5, let them sit somewhere warm getting light for another 5 then dunk&rolled em they would pin within 2-3 days and if i cut them open they were fully colonized inside

here's a curveball... i'd do opposite of him ^^^^^^
just because its slower around the edges/bottom doesn't mean it was slow throughout... that time you spent waiting for the last bit of surface to finish, the inside was also being actively chomped down.
IMO the time to birth is as soon as the surface is finished. the only thing the jar is doing for you is keeping contams out. once the surface is colonized, you're as safe as you're gonna get from contams. it will pin when its damn well ready... leave it in the jar longer, it will seem to pin faster... take it out sooner, it will seem to take longer, but its all the same in the end i've observed. ive noticed the bottoms start colonizing in the MIDDLE before the stuff wrapped around the edges... that tells me it clearly made its way through the inside and broke through to the surface of the bottom before the sides even made it!
only limiting factors is space. if yer FC is full, no harm in keeping it jarred up a little longer until some of the cakes in there are spent. or vice versa, you wanna make room in your incubator, go ahead and birth those babies the second the surface is covered. i cant think of any intuitive reason why you'd wait, even though so many folks reccomend it. even if the inside isn't totally finished, its not exposed to light, internally the CO2 is still high, etc etc, so inside will continue finishing its colonization mission on those lats bits, while the myc on the outside gets ready for fruiting. the lower temp might slow that "internal" myc but again IMO, no difference in the long run. if you're crumbling and casing, that's an exception, i'd wait a little longer to play it safe... but if you're not breaking apart the cake you'd need x-ray vision or the late night tv psychic to really know whats going on inside anyway.
