caseing contams

is it possible to avoid contams on caseings with out stuff like a flow hood? I have a uv air filter that gets 1200 cubic feet do you think just sterilizing the air of the small closet its in will do and being really carfull showwring and useing alchol to sterilize will work out fine or should I take more precaution.

well the best bet would be to use sterilized casing soil and do all of your work in a big enough glove box or better yet if there is room build a clean room with a small entrance way so that you can put on a tyvek suite and sterilize yourself along with waring a face mask.so that would be a big enough room[with a door of some sort that will seal sufficiently} to put a table that can be sterilized and then a smaller room that has adoor also. in the smaller room {sort of like a lean to}you would wipe yourself down to get ride of any contams. IN the bigger clean room before you get started you can spray stuff like Oust or Lysol and wipe the plastic walls ceiling and floor completely. then you can be pretty sure that contams would be minimal.work quickly and use sterilized casing trays and any spoons.

yea do you know anything about the ion genrtor sold by myco suppy get 5500 cubic seems like that would do the job just have it blowing over your work area. think thats good?

well just about any gimmick works as long as the money holds out. an ion generate is very good for very large operations that would need it. it charges the air and repels makes particles fall they work better in closed rooms if you build a clean room and use a flow hood that will push enough air through an heppa filter and use Velcro to seal up the plastic door then all you would have to do is wait a small amount of time for the flow hood to exchange the air in the clean room. as long there is positive presser in the clean room sort of like a bubble when the flow hood is on and that the exhaust holes on the top of the room opposite of the flow hood it works well and alittle cheaper. you could go as far as getting a particulate meter to see how much and then start your work when levels are very low

Don't confuse the sterility required for work with uncolonized grains/brf, with the far less strict requirements for cleanliness with casing. Just wash your table, wash your hands, pasteurize the casing mix and go to work. Wash the trays you're going to use, but you don't need to wipe with alcohol, etc. It never hurts to douse the room with Oust before working, but is optional with casings. Remember, the reason casings contaminate is lack of air exchange, not getting a few trich spores during assembly.
